Brazilian Fish Stew
Prep time: 10 minutes | Cook time: 13 minutes | Serves: 4Ingredients:1 lb haddock fillets, cut into 2-inch cubes1 medium red bell pepper, deseeded and chopped1 medium yellow onion, chopped2 garlic cloves, minced1 lime, juiced1 tbsp cumin powder1 tbsp paprika1 tsp cayenne pepper1 cup unsweetened coconut milk1 ½ cup fish stock2 tbsp olive oilSalt and black pepper to tasteInstructions
- Add all the ingredients to the inner pot.
- Lock the lid in place; select Manual mode on High Pressure and set the timer to 3 minutes.
- After cooking, perform a natural pressure release for 10 minutes, then a quick pressure release to let out the remaining steam, and open the lid.
- Stir and adjust the taste with salt and black pepper.
